well the reason this video is a bit faster is because this one is just for cutting and plating... if you look at our other video which actually shows HOW to make a roll it hink you'll be a little less confused? maybe? let me know what you think. we don't actually have a video showing how to cut the fish yet, but hopefully that'll be coming soon.

Perhaps I'm the only one out there, but this video was done SO rapidly that I couldn't follow what you were doing. My big trouble is trying to figure out how to lay out the fillet. I'm left-handed, and before 2 weeks ago, I was a vegetarian for 15 years, so I realy don't know what striations to be looking for in the meat in order to cut it properly. Any advice on a good balance between an affordable and a comprehensive sushi guide?

howdy! it kind of depends on how serious you are about making sushi... i'd recommend just googling "sushi knives"... they can get pretty expensive. if you want a good one, get one that is traditionally made (made by hand) and folded metal... asides from that, cheap ones run the whole gamut, so i don't really have any recommendations for you, sorry :( i'd recommend checking amazon or something and just reading reviews.

What kind of knife should I be using, usually when I cut the sushi it gets kind of *squashed* a bit by the knife.

make sure you include the blowtorch bit when you're making your own sushi. it'll teach your kids a lot about fire safety!!! (not really)
